cultural identities in the kitchen. Recipes from cafeteria in Cittadellarte,

Coietas, that
is quails in Sardinian language. Surprisingly, coietas in cooking
are stuffed meat rolls, so small that they look like quails. You just
have to take some veal cutlets and stuff them with a mince of bacon-fat,
parsley, and garlic, close the rolls, brown them for ten minutes in
olive oil and serve.
That’s it. The point is to find a farmer breeding cattle in
open pasture. Cafeteria found one, the Farming Co-operative
Society “La Baraggia di Masserano”: now we are able to
serve meat courses made of meat coming from our area. We know how
the cattle are fed. Prices are competitive and cooking becomes more
responsible and “different”.
