Let’s go back to Italy, back to Piedmont,
with a recipe coming from popular practicality. Practicality means
to the peasant cooking what the nature offers, season by season. So
that camomile flowers were eaten, well before were just drunk in tea.
Wash and drain 30 camomile flowers, picked at the moment. Cook long-shaped
pasta (such as tagliolini, 500 grams for six) in salted boiling water,
while you brown 3-4 fresh chives in a pan with 50 grams of butter.
As the chives are brown, add the camomile flowers.
Serve tagliolini in dishes, adding the sauce, some pepper, and grated
parmigiano (if you like).
Then, before cooking, have a walk to pick your camomile flowers…
